Vision
Coal Fired Bistro owner and entrepreneur Eric Bergelson had a vision to bring three of his beloved passions together under one roof. He wanted to create the ultimate dining, wine bar and social experience in the Upstate. As a twenty-year resident of Greenville, South Carolina, Eric wanted to give back to the community that he cherished. He chose the fine dining experience.
In 2005, he purchased an existing eatery and decided to make some changes. These changes took a simple pizzeria and transformed it into a high-end restaurant. Eric knew that he wanted his restaurant to be distinctive. He decided to build the largest coal fired oven in the US measuring 96” x 96”. He added a self-service wine bar unlike any other in the region and enlisted the talents of chef Carlos Echeverri. Eric heard of Carlos through a colleague and convinced him to move from the four star restaurants of New York to South Carolina.
With Carlos on board, Eric handed over the menu and has given him complete freedom to create and explore. Carlos has worked and trained in the finest restaurants in New York and Italy. He brings a very fresh approach to authentic Northern Italian cuisine. Carlos thrives on creating new seasonal dishes while maintaining consistency. Both Eric and Carlos have big plans to grow their concept, but for now they’re content on offering an old world dining experience that is…Distinctive. Authentic. Italian.
